coconut kale protein smoothie



Happy Friday! I hope that you all had a great week. I am excited to share a new recipe with you today for a delicious and healthy smoothie! Coconut kale smoothies are all the rage here in Silver Lake and after trying them all at different juice/smoothie bars decided it was time to make my own. I like mine so much better! There is no comparing making your food at home to buying it in a shop.

Agave is a popular ingredient in this smoothie but I did not use it. I find the coconut water and banana adds plenty of sweetness. If you decide you want the smoothie sweeter I would use a few soaked dates. When planning to make it,  soak the almonds the night before so that you have them ready to go. You can use un-soaked almonds but if not blended completely they will turn into little rocks and that isn’t fun to eat. Plus, soaking releases the enzyme inhibitors making their nutrients more bio-available.

You’re going to need a fresh coconut for this recipe. If you don’t have any experience opening a fresh coconut I’d do a quick YouTube search and watch a few videos, this one is pretty good.  I got great at opening them in culinary school ;) I prefer to use the Thai coconuts as I find them easier to open and they are super cheap at this market near my house. You can always buy raw coconut water at Whole Foods and coconut meat too. Often you can buy Thai coconuts at a place like Whole Foods already opened or have them open one for you.

Coconut Kale Protein Smoothie

 serves 1

Ingredients //

  • 1 c. fresh coconut water
  • 1/2 c. fresh coconut meat
  • 1/4 tsp. cinnamon
  • 1 Tbsp. hemp protein powder
  • 10 soaked raw almonds
  • 4 kale leaves with stalks
  • 1 frozen banana
  • 4 cubes ice


Method //

  1. In a high speed blender add all of the ingredients. Blend until creamy.
  2. Add more coconut water or ice to achieve desired consistency.
  3. Serve immediately and enjoy!
