The weather has been cooling off here in Los Angeles and it looks like it’s here to stay – for a little while anyway ;) In the cooler months I am drawn to warming spices. I find them very comforting. We have fresh almond milk on hand often at my house and lately I have been into adding different spices to it and the results speak for themselves! Yumminess on all fronts.

Once you have your almond milk base you can add all sorts of flavors to it like I did with my Golden Milk. In the evenings I’ll warm up a small glass of this on the stove and drink it while I read. Almonds are a great source of calcium which helps the brain produce melatonin. Warm almond milks are big in Ayurvedic medicine as they bring balance to our constitutions and help us relax in the evening to prepare for sleeping.

Many almond milks are sweetened with everything from agave to cane juice. I sweeten my nut/seed milks with dates. I like the flavor of them and dates are a whole food so they contain all of the nutrients like B-6 and magnesium (also helpful for sleeping!). Date paste is my favorite as it blends perfectly and is incredibly easy to make. Add more or less of the spices you like and don’t be afraid to experiment here ;)

 

Spiced Almond Milk

makes 6 cups

 

Ingredients //

  • 2 c. raw almonds (soak for 24 hours, changing water every 6-8 hours)
  • 6 c. filtered water
  • 1/4 c. date paste
  • 3 cardamom pods
  • 1/4 tsp. ground vanilla or 1 tsp. vanilla extract
  • 3/4 tsp. ground cinnamon
  • 3 small pinches all spice
  • 1/4 tsp. Himalayan salt

 

Method //

  • Drain and rinse almond. Blend the almonds and 6 c. water in a high speed blender for about 60 seconds. Strain through a nut milk bag. Save the pulp for crackers if you wish or discard.
  • Pour almond milk back into the blender and add remaining ingredients.
  • Blend on high until smooth. Taste and adjust seasonings.
  • Milk will keep for 3-4 days in an airtight container in the fridge.
